DESARROLLO DE RECUBRIMIENTOS BIODEGRADABLES A BASE DE BIOPOLÍMEROS PARA INCREMENTAR LA VIDA ÚTIL POSTCOSECHA DE FRUTAS ANDINAS

Las frutas andinas, de la cual se menciona a la uchuva (Physalis peruviana), la naranjilla o lulo (Solanum quitoense), el tomate de árbol (Solanum betaceum) y el mortiño o agraz andino (Vaccinium spp.), constituyen un aporte importante de ingresos para la agricultura familiar de la región. Sin embargo, su fisiología climatérica y su alta tasa respiratoria condicionan su vida útil postcosecha, por lo que se producen pérdidas superiores al 40 % en algunos casos. Ante esta problemática, los recubrimientos comestibles elaborados a partir de biopolímeros quitosano, alginato, almidón, pectina y proteínas han sido una alternativa sostenible frente a los envases plásticos convencionales. Este trabajo se centra en la búsqueda de de información científica sobre el desarrollo y la eficacia de los recubrimientos biodegradables a base de biopolímeros para aumentar la vida útil postcosecha de las frutas andinas. Para lo que se ha seguido una revisión sistemática tipo bibliográfica de los estudios encontrados, siguiendo los lineamientos de la declaración PRISMA 2020 para la búsqueda, selección y síntesis cualitativa de los estudios, consultando bases de datos como Scopus, WoS, ScienceDirect, SciELO y Redalyc. Los resultados indican que los recubrimientos comerciales a base de quitosano y alginato, frecuentemente asociados con cera de abeja, glicerol o compuestos bioactivos, consiguen reducir el pérdida de peso entre un 10 y un 20 %, ralentizar la pérdida de firmeza y la tasa respiratoria, así como la pudrición en frutos como la uchuva, naranjilla, tomate de árbol y mortiño andino y alargar su vida de anaquel entre, dependiendo de la especie y el sistema de almacenamiento estudiado, entre 7 y 21 días. Se concluye que estos sistemas representan una alternativa válida, económica y amigable con el medio ambiente para reducir las pérdidas postcosecha en la fruticultura andina, aunque se recomienda realizar más investigación que investigue su escalamiento industrial y estandarización.
